ITALIAN RICE 
1 sm. onion
1 tbsp. butter
1 can chicken broth, 10 oz.
1 sm. can tomato paste

Saute onion in butter until soft. Add tomato paste. Add broth plus 1 can of water. Bring to boil, simmer 5 minutes. Return to boil. Add 3/4 cup converted rice. Turn heat to low and cook until desired tenderness (20 minutes).
