ITALIAN CHEESE AND RICE PIE 
3 1/2 c. flour
3/4 c. sugar
4 tsp. baking powder
3 eggs
1 stick melted butter
1 egg yolk, for top of crust

FILLING:

3 lb. Ricotta cheese
3 c. cooked rice
3 tbsp. raisins
1 c. sugar
2 eggs
1 tbsp. Romano cheese

Beat the filling ingredients all together with a mixer.

Mix all dry ingredients well; add melted butter and eggs; mix to make a dough. Divide dough in two. Roll out first half and line a pizza pan. Pour in filling. Roll out second half and cover the filling. Cut slits for steam. Bake in 350 degree oven for 50 minutes, then 20 minutes before taking out of the oven, you may brush on the top an egg yolk or milk to get browner.
