MARINATED TUNA STIR-FRY | |
2 lb. tuna, cut into 1-inch cubes (fresh or frozen) 1/4 cup olive oil 1 (16 oz.) bag mixed stir-fry vegetables (fresh or frozen) 1 cup water MARINADE: 2 tsp. minced ginger 2 tsp. minced garlic 1/4 cup soy sauce (I use low sodium) 2 tbsp. lemon juice 2 tsp. cornstarch Mix ginger, garlic, soy sauce, lemon juice, cornstarch and fish cubes in bowl. Stir and soak for 30 minutes. Heat oil in large fry pan on medium. Add marinade and fish, stirring often until fish flakes. Add vegetables and 1 cup water and cover at boiling for 15 minutes. Remove cover, lower heat allow water to evaporate until desired consistency. Serve with your choice of rice. Submitted by: Walt Gerenz |
