SPINACH CHEESE TART 
Unbaked 9 inch pie shell
2 (10 oz.) pkgs. frozen chopped spinach
1/4 c. minced onion
3 tbsp. butter
1/2 tsp. salt
Dash black pepper
2 beaten eggs
1 c. milk
1 c. sharp Cheddar cheese, grated
Italian style: substitute Cheddar with parts of Ricotta and grated Parmesan cheese - add 1/2 tsp. garlic powder

Preheat oven to 350 degrees. Cook spinach according to package directions; drain thoroughly. In medium size skillet, saute onion in butter. Add salt, pepper, and beaten eggs. Fold in grated cheese. Pour into unbaked 9 inch pie shell. Bake 30 minutes, or until set. Serves 8. Serve hot or warm with a tossed salad or soup.
