UNCLE BEN'S® CASSEROLE 
1 (6 oz.) pkg. UNCLE BEN'S® long grain and wild rice
1/4 c. butter
1/3 c. chopped onion
1/3 c. flour
1 tsp. salt
1 c. milk
1 c. chicken broth
2 c. cubed chicken
Pimiento
Parsley
1/4 c. chopped almonds

Prepare contents of rice and seasoning packets according to package directions.

Meanwhile, melt butter in large saucepan. Add onion; cook until tender. Stir in flour and salt. Gradually stir in milk and broth. Cook, stirring constantly until thickened. Stir in chicken, pimiento, etc. Add cooked rice.

Place in a 2 quart casserole. Bake uncovered in a 425 degree oven for 30 minutes. Makes 6 to 8 servings.
