MICROWAVE ACORN SQUASH 
2 sm. acorn squash
2 tbsp. butter
4 tbsp. brown sugar
Salt and pepper

Cut squash lengthwise. Scoop out seeds and discard. Put 1/2 tablespoon butter and 1 tablespoon of brown sugar in center. Add salt and pepper to taste. Cover each and place in a microwave dish. Cook on high until tender. Serve in the skin or scoop into a bowl.

Since microwave ovens vary in power, you may need to adjust your cooking time.
