HUNGARIAN PORK STEW 
4 lb. boneless pork, cut in 1 1/2" cubes
2 tbsp. butter
2 c. sliced onions
2 tbsp. paprika
2 tsp. salt
1/2 tsp. black pepper
2 cloves garlic, minced
1 c. chopped green peppers
1 tbsp. lemon juice
2 tbsp. tomato paste
1/2 tsp. basil
1 c. boiling water

Trim the fat from the pork. Melt the butter in a frying pan; saute the onions until golden. Remove from the heat and stir in the paprika, salt and pepper. Add the meat, garlic, green peppers, lemon juice, tomato paste, basil and the boiling water. Cover and cook over low heat 1 1/2 hours. Watch carefully, and add a little more boiling water if necessary.
