BEEF AND BROCCOLI STIR FRY 
1/2 lb. lean top round beef, trimmed of visible fat
1/4 c. water
1 tbsp. soy sauce
1/2 tsp. cornstarch
1 tbsp. vegetable oil
2 c. fresh broccoli florets
1 c. Julienne strips or slices of carrots
1 sm. onion, cut into 6-8 wedges
Few grains of pepper

Slice the beef in thin strips across the grain (across the narrow width). Mix 2 tablespoons water, the soy sauce and cornstarch in a small bowl. In a 10 inch skillet or wok heat 1 1/2 teaspoons of the oil over moderate heat. Add beef and stir fry about 1 minute, until brown on the outside; remove from skillet. Add remaining 1 1/2 teaspoon soil to skillet, add vegetables and stir fry about 2 minutes, until broccoli is bright green. Reduce heat to moderately low, add remaining 2 tablespoons water, cover and simmer 1 minute. Return beef to skillet, stir soy sauce mixture, add to skillet and cook, stirring constantly, until thickened and boiling; boil about 1 minute. Sprinkle with pepper and serve. Makes 2 diet servings.

Per diet serving: 359 calories, 42 grams protein, 15 grams fat, 17 grams carbohydrate.
