LOW FAT CHICKEN AND BROCCOLI CASSEROLE | |
1 chicken, cooked, skinned & boned 1 pkg. (10 oz.) frozen chopped broccoli, steamed & well drained 1/2 c. water chestnuts (optional) 1 c. skim milk 2 tbsp. cornstarch 1/2 c. chopped mushrooms 2 tbsp. lemon juice 1 tbsp. plain yogurt 6-8 slices lite line borden cheese 3/4 c. bread crumbs 1. Spray 9 x 13 x 2 inch baking dish with Pam. Layer chicken and broccoli in dish and add layer of water chestnuts, if desired. 2. Combine milk and cornstarch in saucepan. Cook over medium heat in microwave until thick. Add mushrooms, lemon juice and yogurt. Pour over chicken. 3. Place cheese slices on top of sauce. Sprinkle with bread crumbs. Bake in preheated oven at 350 degrees for 20-30 minutes. |
