PORK STEAK AND APPLE KRAUT 
4 pork shoulder steaks, cut 1/2" thick
2 tbsp. shortening
1 tsp. salt
1/8 tsp. pepper
1 tbsp. prepared mustard
1 tbsp. prepared horseradish
1 (29 oz.) can sauerkraut, drained
2 med. apples, chopped
1/2 c. chopped onion
1 tsp. caraway seeds

Brown steaks in shortening. Pour off drippings. Season steaks with salt and pepper. Combine mustard and horseradish and spread over steaks. Combine kraut, apples, onion and caraway seeds. Place in a 2 quart baking dish. Arrange steaks on top of mixture. Cover tightly and bake at 350 degrees for 30 minutes, uncover and bake additional 30 minutes.

Easy to prepare and made easier by using the outdoor grill to brown grill marks on the steaks (no messy frying pan). Luckily I had some homemade kraut. Into that was added 1 small onion (medium dice) and 1 large "Honey Crisp" apple (medium dice). Steak in bottom of pan and spread the kraut mixture over the top; this helps keep the steaks juicy & tender.
