PIZZA CRUST THICK AND ZESTY | |
2 1/2 c. all purpose flour 1 pkg. active dry yeast 1 1/2 tsp. salt 1/4 tsp. oregano 1/4 tsp. onion powder 1/8 tsp. garlic powder 1 c. warm water 2 tbsp. shortening Preheat oven to 400 degrees. In bowl, combine 1 cup flour, yeast, salt, oregano, onion powder rand garlic powder. Mix well. Add water and shortening. Mix by hand until somewhat smooth. Gradually stir in remaining flour to make stiff dough. Let rest 15 minutes. With well floured or greased fingers, press into 15 x 10 x 1 inch baking sheet, forming edge. Spread with pizza sauce and desired toppings. Bake for 25 to 30 minutes, until light golden brown and crisp on edges. To Freeze Thick Crust: Shape in pan, wrap and freeze or assemble pizza (with sauce and topping) wrap and freeze. When ready to prepare, thaw and bake at 400 degrees as desired. Frozen crusts should be used within 2 weeks. MAMA MIA PIZZA SAUCE 3 tbsp. olive oil 3/4 c. water 1 tbsp. salt 2 tsp. sugar 1 tsp. basil 1 c. finely chopped onion 1 tbsp. finely chopped garlic 2 (15 oz.) cans tomato sauce 1 bay leaf Dash of pepper In 3 quart saucepan, heat oil. Saute onion until golden. Add garlic and cook 1 to 2 minutes, stirring. Add remaining ingredients and simmer slowly, uncovered for about 1 hour or until thick. Remove bay leaf. Half the sauce is adequate for 2 (15 inch) pizzas. Freeze remaining sauce. Makes about 1 quart of sauce. |
