MINCEMEAT PASTRY SQUARES 
2 1/2 c. sifted flour
1 tbsp. sugar
1 tsp. salt
1 c. shortening
1 egg, separated
Milk
3 c. mincemeat pie filling
1 c. confectioners sugar
2 tbsp. lemon juice

Sift together flour, sugar, and salt; cut in shortening with pastry blender or 2 knives until mixture resembles coarse meal. Beat egg yolk in measuring cup and add enough milk to make 1/2 cup. Add to flour mixture; mix just enough so dough shapes into ball.

Roll out half to 15 x 11 inch rectangle; transfer to baking sheet. Spread evenly with filling to within 3/4 inch of edges. Roll out rest of dough for top crust; place over filling. Seal edges. Beat egg whites until stiff; spread on top crust. Bake at 400 degrees for 25-30 minutes.

Mix confectioners sugar and lemon juice. Drizzle over top of crust while hot. 12-14 servings.
