CHICKEN NUGGETS 
2 whole chicken breasts or 5 chicken thighs, boned & skinned
1/2 c. dry bread crumbs
1/2 c. or less melted butter
1/4 c. Parmesan cheese
1/2 tsp. thyme
1 tsp. basil

Cut chicken into 1 inch cubes. Combine remaining ingredients except butter. Dip cubes into butter, then roll in crumbs. Bake 10 minutes at 400 degrees or until golden, on foil-lined cookie sheets. Yield: 3-4 dozen. Note: To reduce fat intake, dip cubes in skimmed milk instead of butter.
