CHICKEN SCALIPINI 
6 chicken breasts, boned and skinned
1 cube butter (1/2 to cook chicken, 1/2 for mushrooms etc.)
1/2 c. white wine
2 cloves garlic, chopped
12 mushrooms, sliced
3 green onions, chopped
1/2 c. Parmesan cheese
Salt and pepper to taste
Flour
1 egg

Pound breasts well. Dip chicken in flour, egg, flour. Clarify butter and heat up. Add dipped chicken and cook until light brown. Saute mushrooms, green onions, garlic, pepper, salt, butter and wine. Place chicken in a baking pan. Pour sauteed mixture on top and sprinkle Parmesan on top. Cook 350 degrees 25 to 30 minutes. Serve with rice and use sauce over rice.
