CHICKEN BREASTS 
(Can be made the day before your dinner party.)

10 skinned, pounded and boned chicken breast halves, salt and floured
2 eggs, beaten and 2 tbsp. water beaten together
1 c. bread crumbs
2 tbsp. Parmesan cheese
1 tbsp. dried parsley

Dip chicken into egg mix. Dip chicken into crumb mix. Brown on both sides in oil and butter.

SAUCE:

3 tbsp. melted butter
1/2 c. flour
1 tsp. salt
Pepper

Slowly add 2 1/2 cups milk or cream. Stir and bring to boil until thickened. Add 1/2 cup sherry and 1 cup shredded Swiss cheese.

Pour 1/2 of sauce into 9x13 glass baking dish. Lay chicken in sauce and cover with remaining sauce. Cover with foil. Refrigerate. Bake, covered 350 degrees, 30 minutes. Sprinkle with Parmesan cheese and continue baking 20-30 minutes. (If not refrigerated, reduce first baking to 20 minutes.)
