SPINACH SOUFFLE 
2 pkg. chopped frozen spinach, thawed or fresh spinach
2 eggs, beaten
2 tbsp. flour
1/3 c. melted butter
Minced onion to taste
Sm. carton sm. curd cottage cheese
1-2 c. Velveeta cheese
1 c. Mozzarella cheese (plus some for top)

Mix all ingredients in food processor. Pour into deep dish pan. Sprinkle with Mozzarella. Bake at 350 degrees for 1 hour.
