CHICKEN GUMBO | |
2 c. boned chicken 2 c. corn, fresh or canned 4 c. chicken broth 1 med. onion, chopped 3 tbsp. unsaturated oil 1 green pepper, chopped 2 c. sliced okra 1 (8 oz.) can tomatoes 2 tsp. file powder 1 clove garlic, minced Simmer 1 chicken in 1 1/2 quarts of water until tender. Refrigerate. When cool, remove the meat from bones, and skim fat from the broth. In a large pot, saute the onions, garlic and green pepper in oil until tender. Add broth, tomatoes, okra and corn and simmer for 30 minutes. Add chicken at the last minute. Blend in file powder just before serving. Yield: 8 servings, 180 calories per serving. |
