CHICKEN AND SAUSAGE GUMBO 
1 chicken, cut up
1 lb. smoked sausage, sliced and fried a little bit
2 sticks celery
1 bell pepper
1 can Rotel tomatoes
1 can whole kernel corn, drained
Salt and pepper to taste

Put everything in large pot and bring to boil. Make a roux and add to above ingredients. Simmer until done, about 1 - 1 1/2 hours or until desired thickness is obtained.

Roux Mix: Put 1 cup flour in iron skillet on low heat; stir until good and browned, about 15-30 minutes. Watch close so not to burn.
