CHICKEN AND HAM GUMBO 
1 tbsp. vegetable oil
1 lg. onion, finely chopped (1 c.)
1 sweet pepper, finely chopped (1 c.)
1 clove garlic, finely chopped
2 tbsp. flour
1 (14 1/2 oz.) can chicken broth or make your own
3/4 lb. boneless skinned chicken breast, cut in 1 inch pieces
3 oz. diced ham
1 (16 oz.) can tomatoes, chopped
1 bay leaf
1/2 tsp. leaf thyme
1/4 tsp. pepper
1/8 tsp. ground red pepper
1 (10 oz.) pkg. frozen cut okra or fresh
1 1/3 c. plain cooked rice

Saute onion and garlic in oil. Add sweet pepper. Stir in flour until mixed, add broth. Add all ingredients, except okra and rice. Cook 1/2 hour. Add okra boiled 20 minutes more. Add cooked rice. Heat and serve. Can be doubled and frozen for later.
