CHICKEN AND HAM GUMBO 
2 tbsp. toasted flour
1 tbsp. oil
1 lg. onion, chopped (approximately 1 c.)
1 clove garlic
1 sweet red pepper, chopped (about 1 c.)
2 c. chicken broth
1 c. diced cooked chicken
1/2 c. diced ham
2 c. (16 oz.) drained chopped tomatoes
1 bay leaf
1/2 tsp. thyme
1/4 tsp. pepper
1/8 tsp. cayenne pepper
1 c. chopped okra
1 1/3 c. cooked rice

Toast flour in 500 degree oven. Put flour on foil lined cookie sheet. Spread in thin layer. Bake 8-10 minutes, stirring until all is lightly brown; set aside.

In saucepan saute onion and garlic in oil; add pepper. Stir in flour; mix well. Add broth gradually with stirring. Add chicken, tomatoes, ham, and spices. Bring to boil, then reduce heat. Simmer 20 minutes. Add okra, simmer 10 minutes. Serve over or with rice in bowls.
