MOM'S BAKED CHICKEN--THE BEST
YOU'LL EVER EAT

1-2 c. flour
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
Fine herbs (by Spice Island)
Seasoning salt (by Schilling)
Approximately 1 tbsp. butter

Put flour, salt, pepper, paprika in a small paper or plastic bag, about the size of a lunch sack. Place 1-2 pieces of chicken in at a time to lightly coat.

While preparing the chicken, place butter in 9x13 inch baking pan and melt in oven. (You may need to use 2 pans if you run out of space.) When it is completely melted, tilt the pan around until bottom of pan is all covered. Arrange chicken in pan, meatier side down. Sprinkle fairly generously with Fine herbs and seasoning salt.

Bake 25 minutes at 400 degrees. Turn chicken over and sprinkle again with seasonings. Bake another 15 minutes at 350 degrees. This recipe makes great cold chicken for picnics or lunches too.

The chicken tasted great, everyone loved it! I would just recommend a longer cooking time and if you like a crispier texture, place the oven on broil for a few minutes on each side.
