APPLE BREAD 
1 c. sugar
2 eggs
2 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 c. pared chopped apples (4)
1 tbsp. sugar
1/2 c. shortening
1 tsp. vanilla
1 tsp. baking powder
1 tsp. cinnamon
1/2 c. raisins
1/2 c. chopped nuts
1/4 tsp. cinnamon

Heat oven to 350 degrees. Grease only the bottom of a 9 x 5 x 3 inch loaf pan. Mix 1 cup sugar, shortening, eggs and vanilla. Stir in flour, baking powder and soda, 1 teaspoon cinnamon and salt until smooth. (Batter will be thick.) Stir in apples, nuts and raisins. Spread into pan.

Mix 1 tablespoon sugar and 1/4 teaspoon cinnamon; pour over batter. Bake until wooden toothpick inserted 1 inch from center comes out clean, about 50-55 minutes. Loosen sides of loaf from pan; remove bread. Cool before slicing.
