ZUCCHINI CRAB CAKES | |
2 1/2 c. grated zucchini, drained 1 egg, beaten 1 tsp. butter, melted 1 c. Italian bread crumbs 1 1/2 tsp. Old Bay seasoning 1 tsp. mustard 1 tbsp. minced onion 1 tbsp. parsley Mix zucchini, egg and melted butter. Add bread crumbs (may need extra), Old Bay, mustard, onion, and parsley. Chill in refrigerator. Shape like crab cakes, not too large, and roll in additional bread crumbs. Fry in oil until brown. |
