ZUCCHINI "CRAB" CAKES 
2 c. grated zucchini
2 eggs
2 tbsp. mayonnaise
1 1/2 tbsp. Old Bay seasoning
1 c. Italian bread crumbs or 1 c. bread crumbs and Italian seasoning to taste

Wash and grate zucchini. Drain well. Mix in other ingredients. Drop by spoonfuls into deep hot fat. Fry until brown. Drain on absorbent paper. Tastes like crab cakes and may be served with tartar sauce. Serves 3-4.
