ZUCCHINI CRAB CAKES 
2 c. zucchini, grated (washed but not peeled)
2 eggs, slightly beaten
1 c. Italian bread crumbs
1 tbsp. mayonnaise
1/2 tsp. Old Bay seasoning

Mix all together, then shape into patties and fry in vegetable oil over medium heat for approximately 15-20 minutes. Makes 12 cakes.

NOTE: On a four sided grater, use the side with the half moon shaped holes, holding the whole zucchini lengthwise in order to get a "stringy" like cut. The cut allows the texture to look like crab meat.

OPTIONAL: Cakes can be dredges in bread crumbs. This helps to hold cake together.
