ZUCCHINI CRAB CAKES 
2 1/2 c. grated zucchini (grate on large side of grate)
1 c. Italian bread crumbs
1 egg, beaten
1 1/2 tsp. Old Bay seasoning
1 tsp. prepared mustard
1 tbsp. melted butter
Sprinkle of parsley (I use dried)
1 tbsp. minced onion

Mix zucchini, egg and butter. Add bread crumbs, Old Bay Seasoning, mustard and onion. Mix well. Form into cakes.

Roll into more Italian bread crumbs. Chill for 24 hours. Then fry in oil until nice and brown.
