ITALIAN POTATO PUDDING 
4 potatoes, cooked and peeled
1 c. Parmesan or Romano cheese, grated
2 eggs
4 tbsp. butter
1 c. milk
1/4 tsp. salt
Pepper
3 green onions, chopped
2 tbsp. parsley

Combine ingredients in a 1 quart casserole dish. Bake at 350 degrees for 25 to 30 minutes.
