BREADED SAUSAGE STUFFED
MUSHROOMS
 
8 oz. pkg. white button mushrooms
1 1/2 lb. sweet sausage links
2 cloves garlic, smashed and chopped
1/2 onion, diced fine
2 tsp. dried basil
2 eggs
1 cup flavored bread crumbs
1 tbsp. oil
water

Clean and remove stems from mushrooms. Save these stems for later recipes you may want to make. Since the mushrooms will vary is size, slice enough sausage pieces in the right sizes that will just fit into each mushroom.

Place the slices of sausage into a pan with about 3/4 cup of water and cover. You will be cooking the sausage mostly at this stage at just about simmer. About 20 minutes. Let the water run down and let the sausage start to brown. Remove from heat.

While the sausage is cooking add your onion to a pan with the oil and wait for it to start to glaze. Add the garlic. When you start to smell the garlic add the basil. All of this is done while stirring. After a minute or so remove from heat.

Get your egg and bread crumbs ready for the breading process.

Preheat oven to 350°F.

From the onion garlic basil mixture drop a tiny bit into each mushroom. Stuff your sausage pieces into each mushroom. Dip into egg, dip into crumbs and place open side up into a glass baking dish. The oil that remains from the onion garlic basil mixture can be drizzled onto the mushrooms before going into the oven.

Bake at 350°F for about 35 minutes till you start to see the browning you want.

Enjoy this as an appetizer or party hors d' oeuvre.
