LEMON SNOW PUDDING | |
1 tbsp. gelatin 3 tbsp. cold water 1 c. boiling water 1/4 c. lemon juice 1 c. sugar 3 egg whites SAUCE: 5 tbsp. sugar 1/2 tsp. salt 3 egg yolks 2 c. scalded milk 1/2 tsp. vanilla Soak gelatin in cold water 10 minutes and dissolve in the boiling water. Add sugar and lemon juice, strain and set aside to cool. When mixture begins to stiffen, beat until frothy. Fold in stiffly beaten egg whites and beat until stiff enough to hold its shape. Chill and serve with cold sauce. Mix sugar and salt. Add egg yolks and mix well. Add milk and cook over hot water until thick. Chill and add vanilla. |
