SWEET POTATO CASSEROLE 
3 c. cooked sweet potatoes, fresh or canned
1/2 c. brown sugar
2 eggs, beaten
1/2 tsp. salt
1/2 stick butter, melted
1/2 c. evaporated milk
1 1/2 tsp. vanilla

TOPPING:

1/2 c. brown sugar
1/3 c. plain flour
1 c. pecans, chopped
1/3 stick butter, melted

Mash sweet potatoes. Add sugar, eggs, salt, butter, milk and vanilla. Put mixture into casserole dish. Mix topping ingredients and spread over sweet potato mixture. Bake at 325 degrees for 30 minutes.
