CHICKEN, RICE AND VEGETABLE
CASSEROLE
 
2 c. cooked chicken
3/4 c. each fresh or frozen cauliflower, broccoli, and carrots, cut up
1/4 c. cut up celery
1 med. onion, diced
3/4 c. Minute Rice
1 can cream of chicken soup
1 can mushrooms, with juice

Mix all ingredients at 350 degrees 1 hour or until vegetables are done. Serves 6.

I often use a 16 to 20 bag of California mix vegetables instead of measuring 3/4 cup each of the cauliflower, broccoli, and carrots.

Shredded cheddar cheese may be added.
