3 lbs. sweet potatoes
3 c. sugar
1/4 c. butter
2 eggs (beaten)
1 tsp. cinnamon
1/2 tsp. vanilla
2 shakes of salt
2 1/2 tbsp. cornstarch
2 tsp. nutmeg
1 c. evaporated milk
2-3 pie shells

Boil potatoes until done. Mash with butter. Combine all other ingredients except milk and cornstarch. Beat until well mixed. Add milk to cornstarch in separate bowl until mixed. Combine with potatoes. Mix and pour into shells and bake at 350 degrees until done (30-45 minutes).
