STUFFED FRENCH TOAST 
FILLING:

1 c. peanut butter
1/2 c. apple butter
1/2 c. chopped walnuts, pecans, or sunflower seeds
1/4 c. honey or maple syrup
1/2 lg. apple, diced very small
2 tbsp. raisins
1 tbsp. cinnamon

Mix all together to make a thick paste. Set aside.

Beat and set aside: 1/4 tsp. cinnamon 1 tsp. vanilla

Using any bread you like, cut a thick piece, approximately 3-inches and cut a slip down to form a pocket. Don't cut all the way through. Stuff with filling to make 6 pockets. Dip sandwiches in egg mixture, saturating both sides.

Fry until golden, approximately 8 minutes on each side. Serve with syrup, jam, apple butter, yogurt, etc.
