STUFFED FRENCH BREAD
1 loaf (1 lb.) French bread
1 1/2 lbs. ground beef
3/4 c. onion, chopped
2-3 stalks celery, chopped
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
1 egg, beaten
2 c. Cheddar OR Longhorn cheese, shredded
1 can condensed Cheddar cheese soup

Cut bread in half lengthwise and hollow out both sides, leaving the thick crust as a shell. Reserve crumbs for filling. Brown meat, onions, celery, salt and pepper. Drain well.

In a large bowl combine the meat mixture with the bread crumbs, dry mustard, egg and cheese. Mix well. Fill the hollowed out halves of the loaf with this mixture, sandwich both sides back together and wrap in foil.

Bake in an oven preheated to 375 degrees (your oven may need to be a little hotter or cooler) for 30-45 minutes. Before serving, prepare soup as directed on label for cheese sauce. Pour steaming cheese sauce on bread slices and serve, with forks. (Optional). Serves 4 heartily.

Can be made Mexican by adding taco seasoning and accompanying the sandwich with lettuce, salsa (instead of the cheese soup), guacamole and sour cream.
