STUFFED FRENCH TOAST 
2 to 4 slices sourdough bread, cut in 1 inch slices
1 banana
1/3 c. sugar
1 tsp. cinnamon
1 egg
1/4 c. milk
1/2 tsp. vanilla
Oil or shortening for frying
Whipped butter and maple syrup

1. Cut 1 inch pocket in one side of each slice of bread. 2. Slice banana thinly. 3. Stuff each pocket with banana and set aside. 4. Mix sugar and cinnamon and set aside. 5. Mix eggs, milk and vanilla until well blended. 6. Heat 4 inches oil or shortening in pan. 7. Dip bread into egg mixture - soaking for a few minutes. 8. Fry - turning to brown both sides. 9. Drain on paper towel and cake rack. 10. Sprinkle with sugar mixture and serve.
