FRENCH PORK STUFFING 
5 lb. ground pork
Poultry seasoning
Salt & pepper
1 onion, chopped
Saltines, crushed (approx. 12)

Brown pork and onions on low heat for 1-2 hours until completely done. Add poultry, seasoning, salt and pepper to taste. Add crushed saltines to hold pork together. Stuff turkey and cook. Do not stuff turkey until ready to cook.

A recipe very similar to this has been a staple at every Christmas and Thanksgiving I've ever spend with my family. Our preparation and seasoning is slightly different- we boil the ground pork with water until it cooks off instead of browning it and we use cloves instead of poultry seasoning, but other than that it's pretty danged close!

The smell of pork and cloves and onions cooking on the stove to make stuffing is the smell of the holiday season to me :)
