BANANA OATMEAL MUFFINS 
1 c. reg. or quick rolled oats
1 c. buttermilk
1 egg
1/2 c. brown sugar
1/3 c. oil
1 1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3 sm. bananas, mashed
1/2 tsp. cinnamon

Soak the oats in the buttermilk for 30 minutes. Add the egg and beat well. Add the brown sugar, oil and bananas. Sift all the dry ingredients, and add to the first mixture. Mix lightly. Fill muffin pans 2/3 full. Bake at 400 degrees for 15 to 20 minutes.

These were very good - moist and flavorful. I doubled the recipe, added about 1/2 cup chopped walnuts and baked them in the mini muffin cups to bring for a breakfast gathering. They went over very well with all the ladies! I will definitely make these again.
