BANANA-NUT OATMEAL MUFFINS | |
8 oz. or 2 c. chopped walnuts 2 c. oats 3 c. flour 1 tbsp. baking soda 2 tsp. baking powder 1 tsp. salt 4 lg. bananas or 2 c. mashed 1 c. sour milk 1 c. honey 1/4 c. oil or melted butter 1 egg Mix walnuts, oats, flour, baking powder, baking soda, and salt in one bowl. In another bowl mash bananas and add milk, honey, oil and egg until blended. Stir banana mixture into flour just until moistened. (Batter will be lumpy) Bake 15 to 20 minutes at 400 degrees. Makes 24. |
