OATMEAL CRUNCH COOKIES 
1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs, well beaten
1/2 tsp. lemon flavoring
1 1/2 c. flour
1/2 tsp. cinnamon
1 tsp. salt
1/2 c. walnuts, cut up
3 c. oatmeal (added last)

Cream shortening and sugar. Add 2 well beaten eggs; mix well. Add lemon extract. Sift dry ingredients and add. Then add chopped walnuts. Lastly, add oatmeal.

Chill mixture in refrigerator a few hours or overnight.

By spoonfuls form into balls. Place on cookie sheet. With a water glass, greased on bottom and dipped in granulated sugar, press cookie flat. (Dip glass in sugar each time.) Bake in moderate oven, 350 degrees about 10 minutes.
