OATMEAL RHUBARB CRUNCH 
1 c. sifted flour
3/4 c. oatmeal (uncooked)
1 c. brown sugar, firmly packed
1/2 c. butter, melted
1 tsp. cinnamon
4 c. rhubarb, diced
1 c. sugar
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla

Mix flour, oatmeal, brown sugar, melted butter and cinnamon until crumbly. Press half of mixture into greased 9-inch baking dish. Cover crumb mixture with diced rhubarb. Combine sugar, cornstarch, water and vanilla. Cook until thick. Pour this sauce over rhubarb. Top with remaining crumbs and bake at 350 degrees for 1 hour.
