CHINESE-CARIBBEAN SWEET AND SOUR
PORK
 
1 egg, beaten
2 tbsp. soy sauce
salt and pepper
2 lb. pork loin, diced into 1/2-inch cubes
3 cloves garlic, minced
1 tbsp. cornstarch
2 tbsp. malt vinegar
1/4 c. brown sugar
1/4 c. tomato sauce
olive oil
flour

Combine egg with soy sauce and salt and pepper to taste. Add diced pork and marinate for at least 20 minutes.

Combine cornstarch, vinegar, garlic, sugar, and tomato sauce to taste in a saucepan and mix well. Heat quickly, stirring until the sugar dissolves. Set aside.

Preheat the oil for deep frying in a large, heavy skillet. Remove the pork from the marinade and dust with flour. Then deep fry evenly. Drain and add to sauce in saucepan.

Cook for about 3 minutes, stirring occasionally.

Serve.
