CHEESECAKE MINIATURES 
24 vanilla wafers
16 oz. creamed cheese (softened)
2 eggs
14 oz. can sweetened condensed milk
1 tsp. vanilla
1 tsp. lemon juice
1/4 tsp. salt
1 can cherry pie filling

Place 1 vanilla wafer flat side down in 24 paper-lined muffin cups. Beat cram cheese in mixer bowl until fluffy. Add eggs, condensed milk, vanilla, lemon juice and salt; mix well.

Fill prepared muffin cups 2/3 full. Bake at 350 degrees for 12 to 15 minutes or until filling is puffed; cool. Spoon pie filling over top. Store in refrigerator. Yield: 2 dozen.
