MINIATURE HOLIDAY CHEESECAKES 
18 vanilla wafers
3 (8 oz.) pkgs. Philadelphia cream cheese, softened
3/4 c. sugar
1 tbsp. lemon juice (one lemon squeezed works well)
1 1/4 tsp. grated lemon peel
3/4 tsp. vanilla
3 eggs
Pie filling, strawberries, cherries, or blueberries

Place wafers, flat side down, on bottom for each 18 foil or paper-lined baking cups. Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition.

Pour into baking cups, filling each cup almost full. Bake at 325 degrees 25 minutes. Cool before removing from pan. Chill. Top with filling. Yield: 18 servings.
