MINIATURE CHERRY CHEESECAKES 
1 box vanilla wafers
2 (8 oz.) cream cheese
2 eggs
3/4 c. sugar
1 tbsp. lemon juice
1 tsp. vanilla
1 - 2 cans cherry or lemon pie filling

Put cupcake liners in muffin tins. Place a vanilla wafer in muffin tin upside down. Beat all ingredients, except pie filling, until sooth. Fill cups 3/4 full. Bake at 375 degrees for 15 minutes. Cool. Top with cherry or lemon pie filling.
