MINIATURE CHEESECAKES 
24 aluminum foil cupcake liners
24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can fruit topping (cherry, peach, blueberry, etc.)

Place cupcake liners in tins and place 1 vanilla wafer in each. In a small bowl, beat cream cheese, sugar, eggs, lemon juice, and vanilla, until light and fluffy. Fill the liners 2/3 full with cheese mixture. Bake in preheated oven at 375 degrees for 15 to 20 minutes until set. Place spoonful of fruit topping in each one and then chill.
