SPANISH RICE 
4 slices bacon, browned, crumbled
1 c. green pepper, chopped
1 c. onion, chopped
1/2 c. celery
2 qts. whole tomatoes, broken
2 lbs. ground beef
1 c. brown sugar
1 tsp. basil
1 tbsp. prepared mustard
1 tbsp. salt
1/4 c. cheddar cheese, grated
14 oz. quick cooking rice

Brown and crumble the bacon. Saute pepper, onion and celery in bacon drippings. Mix all ingredients except rice, brown sugar and cheese. Simmer 30 minutes. Add rice and sugar. Turn into baking dish. Sprinkle cheese on top. Bake 30 minutes at 350 degrees.
