MEXICAN STYLE STUFFED PEPPERS | |
1 lb. ground beef 1 tsp. olive oil 1 large onion, chopped 3 cloves garlic, minced 1 package taco seasoning 1/2 tsp. oregano 1/4 tsp. ground cumin seed 1/4 tsp. red pepper flakes 1 cup canned black beans, drained 1 cup medium salsa 4 large green peppers 1 large tomato, chopped 1/2 cup shredded cheddar cheese 1/4 cup sour cream In a large skillet, sauté beef and onion in olive oil over medium heat until no longer pink; adding garlic during last few minutes; drain. Stir in taco seasoning, black beans and salsa. Heat on high for 1 minute; reduce heat and simmer for 5 minutes. Remove tops from peppers from; remove stems and seeds. Spoon beef mixture into each pepper to fill equally. Place in a greased 13x9-inch baking dish. Cover and bake in a preheated 350°F oven for 20-30 minutes or until peppers are tender. Top with tomato and cheese ten minutes before baking is done. Serve with sour cream, if desired. Submitted by: Belle |
