MEATLOAF WITH CHEESE 
2 lb. ground beef
2 c. soft stale bread crumbs
3/4 c. milk
2 eggs, slightly beaten
1/3 c. fresh or frozen chopped onion
1/2 c. fresh or frozen chopped green pepper
2 tbsp. horseradish
2 tsp. salt
1 tbsp. prepared mustard
1 (12 oz.) pkg. sliced process American cheese
1/3 c. chopped parsley
Paprika

Mix well meat, crumbs, eggs, onion, green pepper, horseradish, salt, and mustard. Put 1/3 of mixture in 9 x 5 x 3 inch loaf pan. Layer with 1/3 of cheese, sprinkle with half the parsley. Cover with second third of meat and cheese, add remaining parsley then remaining meat. Bake at 375 degrees for about 1 hour. Cover with remaining cheese and let stand in oven just long enough to melt cheese. Sprinkle with paprika. Serves 6.
