MEATLOAF WITH CHEESE 
1 1/2 lb. ground beef
1/4 lb. (4 oz.) mushrooms, chopped
1 med. onion, chopped
3/4 c. dry bread crumbs
1 egg
1 1/4 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1/2 lb. (8 oz.) extra sharp Cheddar cheese

Blend meat with chopped mushrooms, onion, bread crumbs, eggs, salt, pepper and milk until well blended.

Dice cheese into 1/2 inch cubes. Blend into meat mixture (by hand) making sure to distribute the cheese chunks evenly.

Pack into a 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 hour to 1 1/4 hours. Pour off liquid. Cool slightly before cutting. Good with scalloped potatoes.
