PINWHEEL CHEESE MEAT LOAF 
2 lb. ground beef
2 eggs
1 onion, diced
1/4 c. ketchup
1 c. uncooked oatmeal
2 1/2 tsp. salt
1/4 tsp. pepper
1 tsp. prepared mustard
1 c. milk

Mix all ingredients together. Pat in a 10 x 14 pan on foil. Sprinkle with 1 1/2 cup shredded cheese to 1 inch of edges. Roll from shorter side like a jelly roll. Transfer to 9 x 13 pan. Seam side down. Bake for 45 minutes in a 350 degree oven. Pour 1/2 cup tomato sauce over meat log. Bake for 15 minutes longer. Sprinkle top with 1/2 c. additional shredded cheese. Let stand for 10 minutes before slicing to serve.
